Lockdown days need new recipes to satiate the taste buds as there's no more fast food available. That's when I combined multiple recipes available online and arrived at my own signature creamy herb chicken pasta recipe. And guess what - it turned out superb (for me!). Ingredients: Chicken Breast - 250 gm, cut into thin strips Onion - 1 medium, cut into rings All purpose flour / maida - 2 tbsp Milk - 150 ml Pepper - 1/2 tsp or to taste Oregano - 1.5 tbsp Penne Pasta - 125 gm Garlic - 7-8 cloves, finely chopped Butter - 2 tbsp Oil - 1 tsp Salt - to taste How to make?
Boil pasta in 3-4 cups of water, adding salt to taste and oil. It will take around 15-20 mins for the pasta to get cooked. Drain excess water and keep aside the cooked pasta
Boil chicken in 300 ml water till it is cooked completely, it will take about 15-20 mins. In the same pan, add pepper and oregano and simmer for 3-4 mins. Ensure that there is some stock left along with the boiled chicken
Heat butter in a non-stick pan, add garlic cloves and saute till raw smell goes away. Add onion rings and cook till golden brown on medium heat.
Then add all-purpose flour and saute till colour changes to a golden brown on a medium heat
Add milk and stir continuously on low to medium heat so that no lumps are formed. Add salt to taste
Once the mixture thickens, add the chicken with the stock and simmer till you get the desired consistency
Add pasta and mix for 2 mins
Garnish with oregano and chilli flakes. Creamy Herb Chicken Pasta is Ready to serve
